
Harvest Ciders
Our Harvest Ciders are made once a year with the apple harvest and fermented at ambient temperature. They are made as naturally as possible, with little intervention and no filtration other than gravity and time. These are orchard blends, meaning the apples are blended and pressed together. Like wine, each pommage will vary year to year, and many will do well with age.
The Avalon
Traditional semi-dry cider. Medium acid, astringent tannins, and body. Aromas of lemon and honey.
Made from Golden Russet, Foxwhelp, Yarlington Mill, and Dabinate Apples.
Tomber dans les Pommes
French style semi-sweet cider. Light acid, medium tannin, full bodied with an earthy taste. Aromas of caramel, vanilla, fig, and pear.
Made from Marie Menard, Reine des Pommes, Harrison, and Roxbury Russet Apples
The Little Apple
Low-alcohol semi-dry cider. Very light, refreshing, and bubbly. Light acid and tannin, with a creamy mouthfeel and a lingering minerality on the tongue. Aromas of melon and green apples.
Made by rehydrating the pomace from our other ciders, pressing again to get a juice/water mixture, and adding crabapple blend for more flavor and sugar.
The Little Rose
Low-alcohol semi-sweet rosé cider. Light body that is acid forward with light tannins.
Made from a ciderkin of red-flesh apples, and backsweetened with foraged red-flesh crabapples.
The Olive Branch
Heirloom dry cider that is fermented on olive leaves, branches, and blossoms. Crisp acidity, with a medium body, and medium bitterness from the wood and leaves. Some herbaceous notes from the leaves and blossoms, and a slight woodiness.
Made from Newtown Pippin apples.
The Cooper
Specialty single-varietal semi-sweet cider. Flavor has a delicate acidity, light tannins, and robust oak. Strong aromas of bourbon and oak, with a hint of vanilla and honey.
Made from Sweet Alford Apples and fermented and aged on bourbon oak.
The Heart of the Valley
This cider is a special project benefiting the local Salem Boys and Girls Club. For this we hand harvested many apples and pears from in and around the city of Salem. Every year there are thousands of pounds of apples that go unwanted and wasted. Many people don't take care of their trees or simply don't want to harvest their fruit. So in order to put that fruit to use I harvest it and made a delicious cider. This cider will mostly go into cans, a first for us, the design is done by a local artist, and the profits will be donated to the local boys and girls club.
